Peanut Butter Soup
My friend
Bob and I have had an interest in the idea of "Peanut Butter Soup". We've
actually created a few different (extremely varied) recipes. This one is
actually NOT one of our inventions, but comes from a traditional African
style soup.
Ingredients
- 3 Tbsp Butter
- 3+ Tbsp Flour
- 4 1/2 Cups Milk
- 1 or 2 Tbsp Grated (minced) Onion
- 1/4 tsp Celery Salt
- 1 Cup (creamy) Peanut Butter
- 3 Cups (2 cans) Diced Tomatoes
- Salt and Pepper
- Cocoa powder for garnish
- Drain (sieve) the tomatoes and heat them. Start to heat the milk in a pot slowly.
Go ahead and add the seasonings to the milk. Prepare
a white sauce by making a roux (whisk the butter and flour over the stove
until bubbly
and
just about
brown)
and
then add some of the milk a bit at a time, whisking constantly until it is
smooth. Once you've added about two cups of milk this way, return the entire
mix to the pot and stir until smooth.
- In a separate bowl mix the peanut butter with some of the white sauce until
smooth and consistent. Add more white sauce a little at a time (like before)
and keep whisking until smooth and consistent. Then return the mixture to
the pot
- Add the tomatoes and mix well.
- SERVE with a light dusting of cocoa powder as garnish.
2 convenient ways to heat the tomatoes: either heat them over
the stove until bubbly and then drain the liquid in a sieve or drain
first and then heat will in the microwave. TRUST ME about the cocoa power garnish.
It is the PERFECT finish!
